Lisa's Quick Beef Stroganoff
3/4 lb. thinly sliced top round or flank steak
1 pkg. whole or sliced fresh button mushrooms
3-4 medium cloves of garlic crushed (the more garlic the better!)
1 can beef broth
3-4 cubes of beef bouillon
1 pint of sour cream (don't use no fat, but light is okay)
2-3 Tbs. flour
Fresh parsley or scallions
Slice beef into thin strips across the grain. Heat about 2 Tbs. olive oil and garlic in a skillet (do not burn garlic). Add beef and saute until beef is cooked. Add mushrooms and let them cook until tender. Add can of beef broth and the bouillon cubes. Add the flour to the sour cream and mix until smooth. Add sour cream and flour mixture to the skillet. Let cook until sauce is thick. Add either parsley or scallions at the end. Serve over egg noodles, rice, or mashed potatoes along with a fresh salad! Delicious!!!
Or you could just order a pizza and sit around the pool with a margarita and forget about the mess that is your kitchen!!
